Eggs in Spinach

I’ve recently been inspired by various cook-it-in-a-___ suggestions for eggs.

Anyone who’s tried to clean egg stuck to a metal mold will see the appeal of an edible ring!

One morning as I was dreaming of omelets, I had an idea: why not start with our staple, greens sauteed with garlic, and use those to build a “ring” for our eggs?

Spinach and Eggs

The results were gorgeous, and delicious on a slice of whole wheat bread. There’s no recipe, really. Just sautee 1-2 cloves garlic in about 1 tsp oil, add greens when fragrant and cook until wilted. Use a spatula to arrange the greens into one or more egg-sized circles then crack an egg into each one. Cover the pan and cook to your liking! A touch of salt and pepper and you’ve got yourself a beautiful, easy breakfast.
